If you were a fan of blue cheese made from dairy our dairy free version will hit the spot. We use traditional techniques and cultures to create a firm yet creamy blue cheese with complex pungent blue flavors. It's earthy, savory, salty and cheesy! This cheese will continue to form mold on the surface. It is edible and will add to that funky flavor blue cheese is known for.

To make this extra special dairy free cheese we use our house made shitake miso. The current batch of shitake miso has aged 2 years- it is complex and rich giving this cheese deep savory notes. 

The process to make a vegan blue cheese requires a blend of art and science. Temperature, ph, and humidity must be monitored to create the correct environment for the blue mold to thrive. To finish off the blue cheese we give each wheel a wash with apple brandy. The brandy adds a little yeasty funk and slight sweetness to the rind. The rind is completely edible!

 

Ingredients:  Cashew, Water, Organic Coconut Oil, Salt, Shitaki Miso (white rice, shitaki mushrooms, koji, salt) Vegan Cultures and Enzymes. Washed with Apple Brandy
